Steak and Sweet Potatoes Stew
INGREDIENTS
- 2 pounds top sirloin steak
- 1-2 sweet potatoes
- 2 cups onion
- 1 cup red bell pepper
- 1 cup carrot
- 1/2 cup dry red wine
- 4 cups beef stock
- Oil
- Salt and pepper
- Thyme

INSTRUCTIONS
- Season the top sirloin steak generously with salt and pepper.
- Heat 2 tbsp. of oil on high heat in a heavy duty pot.
- Place steak in the pot and cook 7 to 10 minutes for medium rare to medium doneness, turning occasionally. Remove steak from the pot and let rest. Reduce heat to medium and add an additional tbsp. of oil.
- Add the onion, carrot and red bell pepper diced to the pot sautéing for 2-4 minutes.
- Stir in wine, the beef stock, the thyme and steak diced in cubes. Bring to a boil and reduce heat and simmer until beef is very tender, about 30 minutes.
- Stir in sweet potatoes diced in cubes and simmer until potatoes are just tender and stew has thickened, about 20 minutes.
- Remove and discard thyme and stir in parsley and season with salt and pepper, to taste.
- Just serve and eat!
